Sweet Potato PB Protein Pancakes

Make these delicious sweet potato pancakes with sweet potato powder. Our friends at Bruises & Calluses prefer the sweet potato powder in particular as it’s highly concentrated, so is a great source of potassium and vitamin A.
If you don’t have any to hand, or can’t find any in the shops, you can sub the powder for 100g cooked sweet potato instead!

Ingredients (makes 3 large pancakes)

Method

  • Blend everything together until you get a smooth and thick batter.
  • Heat a dab of oil in a pan and ladle in a third of the mixture.
  • Cook on both sides for a few minutes until browned and flippable!
    Take straight from the pan and, whilst hot, add a dollop of Hognuts Pavlova peanut butter.
