High Protein Chocolate Salted Caramel Cookies Recipe

Oats, coconut, cinnamon and lotssss of chocolate salted caramel peanut butter make these cookies irresistible! High protein and full of healthy fats you can enjoy these around the clock. The recipe bakes around 15 cookies, but you can make more bite-size cookies for pop-in-the-mouth goodness just by making cookies with a smaller diameter before you bake them! Ingredients

  • 250g pumpkin puree
  • 2 egg whites
  • 100ml water
  • 50ml Caramel syrup
  • 2 TBSP Hognuts Chocolate Salted Caramel Bakin’ Butter
  • 1 TBSP coconut oil
  • 100g oat flour (I just grind regular oats)
  • 20g Coconut flour
  • 30g Chocolate whey
  • 1 TBSP Cinnamon
  • 1 TBSP Sweetener
  • 1 TSP Baking powder

Method

  1. Preheat the oven to 180 degrees
  2. Blend together the pumpkin puree, egg white, syrup & water really well
  3. Melt the oil and pour it into the Hognuts Peanut Butter
  4. Mix together all the dry ingredients (Oats, coconut flour, whey, cinnamon, sweetener, baking powder)
  5. In a plastic bowl or jug, combine all the wet and dry ingredients
  6. (You should have a thick and sticky mixture- it you feel it’s too dry, add some more water, alternatively if it feels too runny add a very small pinch of coconut flour)
  7. Dollop the mixture onto grease proof baking paper (you can make 16 large cookies or about 30 small ones)
  8. Pop in the oven for 15-20 minutes
  9. Enjoy the entire batch, warm, smothered in even more Hognuts Salted Caramel Peanut butter or dipped into Caramel syrup!
